Brownie Bites



Earlier this month, I wanted to make brownies for a group of people. In the past, I have always just done the 9x13 pan and took the time to cut the brownies down. Not this time! I decided to do brownie bites- then wondered "Why did I never try this before?!?" I found it to be a simpiler way of doing brownies for larger groups. Next time I am making dessert for a get together and I want it to be brownies, this is how I will do it!

You will need your choice of brownie mix and mini muffin pans. Follow the directions on the box and put spoonfuls of brownie into your greased mini muffin pans. They take between 15-20 minutes to bake. Let them cool some in then pan, then take out and enjoy!

Zucchini Minis



                 

A few weeks ago , my husband and I were out running errands and decided to go to Ruby Tuesdays. I was craving their Zucchini Minis, only to be disappointed as they no longer carried them on their menu. So I set forth that day to look for a recipe to make them at home.  I scoured the internet and picked one that seemed closest to what I had eaten before and adapted it to our preferences.  I made this the other day and my husband absolutely loved them! Hope you enjoy them as much as we did. I would also love to hear any changes that you made when you made them.






You will need 2 cups zucchini, grated and drained, 1/4 cup red pepper (finely chopped), 1/2 cup onions(small dice), 1 clove garlic(diced), 2 tsp dill, 2 tbs parsley,4 ounces Feta Cheese, 1/4 cup flour, 1/4 cup oil, 2 eggs(beaten), salt and pepper (to taste), Extra oil or cooking spray for pan (not pictured).

  
 Mix  zucchini, pepper, onions, dill, parsley, feta cheese, and flour together then add oil and egg, mixing until incorporated.


 Drop spoonfuls of the zucchini mixture into the pan, press down to flatten. You will want to press these down so that everything inside the cake cooks evenly.
  Give the cakes a few minutes and then turn over and cook the other side to a golden brown.

   
Serve on toasted slider buns with whatever extras you prefer!
